Recipe of the Month---5/13/2008

This is one of the best appetizers you can make

I Guarantee it!!!!

 

Cowboy Caviar

 
  Dressing

2 Tablespoons Red Wine Vinegar

1 Tablespoon Tabasco

1 Tablespoon Olive Oil

1 Clove of Garlic (minced)

1/8 teaspoon Pepper




1 Avocado (Firm) cut in small cubes



1 Can Black eyed peas

1 Can of Corn (not creamed)

2/3 cup thinly sliced Green Onions

2/3 cup Fresh Cilantro

1/2 lb. Roma Tomatoes (roughly chopped)




Mix first 5 ingredients together to make dressing and set aside.

Peel and core Avocado and chop into small cubes.

Mix Avocado into dressing and set aside.

In a large bowl mix black eyed peas, corn, green onions, cilantro and tomatoes together.

Pour dressing and avocado mixture into bowl and mix everything together.

Let chill 1 hour and salt and pepper to taste.

Might need to mix in a little more oil if the mixture seems dry.

Serve in a smaller bowl with chips and watch it disappear!!
